School is out for the summer, and the long, lazy mornings, spent over a home made breakfast, and conversation have begun.
The first meal my boys requested was waffles – too excited to engage in idle chat, they at least took the time to devour 2 waffles each, before heading outdoors to the days adventures.
2 cups flour
1 tablespoon baking powder
1 teaspoon salt
3 tablespoons sugar
4 egg yolks
1 1/4 cups milk
1/2 cup vegetable oil
1 teaspoon vanilla essence
4 egg whites
In a large bowl, sift together flour, baking powder, salt and sugar. Make a well in the center of the mixture.
In a separate bowl, mix egg yolks, milk, oil and vanilla essence. Pour into the flour mixture and stir just until ingredients are moistened.
In another bowl, beat egg whites until stiff. Fold into batter.
Cook batter in a waffle iron according to manufacturers instructions.
