My daughter was in a horse camp for a week, and for the show and potluck on the final day, I made these cookies to share. Gluten free, they were lovely in taste and texture.
PEANUT BUTTER CHOCOLATE CHIP COOKIES
1/4 teaspoon salt
1 egg
1 cup chunky peanut butter
1/3 cup granulated sugar
1/4 cup brown sugar
1/2 cup semi-sweet chocolate mini-chips
Heat oven to 375F.
Place salt and egg in a medium bowl, stir with a whisk until lightly beaten. Add peanut butter, granulated sugar, brown sugar and chocolate chips, stirring to combine.
Place dough by tablespoonfuls onto a baking sheet lined with parchment paper. Gently press the top of each cookie with a fork.
Bake for 10 minutes or until lightly browned.
