The middle school in our area changed to a continuous learning calendar this year, which I am very excited about, and fully support. I prefer the arrangement of the school year, and the regular, scheduled breaks, even though it means we have kids on two different schedules.
My son requested these Pumpkin Apple Waffles for his first day of school, although it still feels like summer, and not quite time for the fall flavors – they were delicious and offered a sweet transition between home and his first time to ride the bus.
PUMPKIN APPLE WAFFLES
1/2 cup pumpkin puree
1/2 cup shredded apple
3/4 cup milk
3 tablespoons butter, melted
1 cup flour
1/2 cup brown sugar
1 1/2 teaspoons baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
1/4 teaspoon nutmeg
1/8 teaspoon ginger
1/8 teaspoon ground cloves
2 eggs, beaten
Prepare waffle iron according to waffle maker instructions.
In a large mixing bowl, mix together the pumpkin, apple, milk and butter. In another bowl, combine flour, brown sugar, baking powder, cinnamon, salt, nutmeg, ginger and cloves.
Add wet ingredients to the dry ingredients and mix until just moistened. Stir in the eggs.
Pour enough batter to fill two-thirds of the waffle iron. Cook until golden brown. Repeat with remaining batter.
