Even though the darling, furry groundhog saw his shadow today – these sweet little replicas should take the chill off the predicted six more weeks of winter.
PUNXSUTAWNEY PHIL CUPCAKES
FOR THE BLACK BOTTOM CUPCAKES
2 cups flour
1 cup brown sugar
3/4 cup unsweetened cocoa powder
1/2 cup plus 1/3 cup sugar, divided
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 package (8-ounces) cream cheese, softened
4 eggs, divided
1 cup buttermilk
1/2 cup vegetable oil
1 1/2 teaspoons vanilla
Heat oven to 350F. Line 20 muffin cups with paper baking cups.
Combine flour, brown sugar, cocoa, 1/2 cup sugar, baking powder, baking soda and salt in a large bowl, mix well.
Beat cream cheese, 1 egg and remaining 1/3 cup sugar in small bowl until smooth, set aside.
Beat buttermilk, remaining 3 eggs, oil and vanilla in medium bowl until well blended. Add buttermilk mixture to flour mixture, beat 2 minutes or until blended. Spoon batter evenly into prepared muffin cups. Spoon heaping tablespoons of cream cheese mixture over batter in each cup, gently swirl with tip of knife to marbleize.
Bake for 20 to 25 minutes or until toothpick inserted into centers comes out clean. Cool 10 minutes in pans on wire rack, transfer to wire rack to cool completely.

FOR THE PUNXSUTAWNEY PHIL CUPCAKES
Top each cupcake with chocolate frosting, roll in chocolate sprinkles. Using a piping bag, make a circle for the face and top with two smaller circles for ears. Place a brown m&m in the center of the face for his nose, and use 2 inverted mini chocolate chips for his eyes. Finish with 2 slivered almonds for his teeth.
