Shrove Tuesday, Mardi Gras or Fat Tuesday has developed into a day of celebration, feasting and indulgence. It is common to enjoy rich, heavy, succulent foods – which traditionally was in order to satiate oneself and to use up those foods that would be restricted, so they wouldn’t decay and spoil or be too tempting during the deprivations of the Lenten season. Pancakes are the perfect dish to utilize those foods that are often relinquished during this Christian time of repentance.
2 cups milk
2 teaspoons baking powder
2 eggs, lightly beaten
1/3 cup sugar
1 teaspoon vanilla
dash of salt
1/2 stick butter
1 1/2 cups flour
Melt the butter in a large bowl, add milk, baking powder, eggs, sugar, vanilla and a dash of salt, mixing well with a whisk.
Add flour to make desired consistency, whisking just until flour is incorporated.
Cook in skillet until pancakes are lightly browned.
