My daughter and I made Meat Loaf Muffins, topped with mashed potato “frosting”, alongside a batch of S’Mores muffins – intending to give the boys a surprise. They had given us a scare the year before on April Fools Day with a can of “sparrow soup”.
The boys were fooled for about 3 seconds, until they took the first bite, but pronounced both sweet and savory muffins very tasty, and were very thankful there were no unusual ingredients involved.
MEAT LOAF MUFFINS
1 tablespoon olive oil
1/2 onion, finely chopped
1/2 cup grated carrot
1 teaspoon dried oregano
3 garlic cloves, minced
2 tablespoons ketchup
1 pound ground beef
1 teaspoon Worcestershire sauce
salt and pepper
prepared mashed potatoes
Heat oven to 350F. Place 9 paper liners into muffin tins.
Heat the olive oil in a large skillet over medium-high heat. Add onion, carrot, oregano and garlic, sauté for 4 or 5 minutes. Cool.
Combine onion mixture, ketchup, ground beef, Worcestershire sauce and egg. Season to taste with salt and pepper.
Spoon the mixture into prepared muffin cups, bake for 20 to 25 minutes. Let stand for 5 minutes.
Pipe mashed potatoes on top of muffins.
