This is one of my daughters favorite breakfast dishes. She discovered it while reading through her American Girl magazine, and made it as soon as she saw the recipe – I mean immediately. I love that it is simple enough for her to make independently, and she still will occasionally make it for herself, but for some reason, she always asks me to prepare it for her on the morning of a horse show.
EGG BAKE IN A MUG
In a microwave safe mug, beat 1 egg and 1 1/2 tablespoons of milk with a fork. Add dashes of salt and pepper. Mix in cubed ham. Microwave on high for 30 seconds. Sprinkle cheese on top, and then microwave 30 seconds more, or until done. Let cool slightly before eating.
