A lovely, simple, summery salad to accompany any meal.
BLACK BEAN AND CORN SALAD
1 jalapeño pepper
1/2 tablespoon salt
2 tablespoons olive oil
2 tablespoons lime juice
handful of cilantro, chopped
3 green onions, chopped
6 campari tomatoes chopped
1 1/2 cups corn kernels, cut from grilled cobs
1 can black beans, rinsed
Whisk together lime juice, olive oil and salt in a medium bowl. Gently stir in beans, corn, green onions, jalapeño, cilantro and tomatoes.
