This quick, easy and delicious chicken dish has become a family favorite we have cooked chicken thighs on the outdoor grill alongside broccoli as well as followed the recipe and baked chicken drumsticks in the oven with sweet potatoes.
-grilled chicken thighs and broccoli
ORANGE CHIPOTLE CHICKEN AND SWEET POTATOES
-roasted chicken drumsticks and sweet potatoes
1/2 to 3/4 cup orange marmalade
1 1/2 tablespoons of adobo sauce from canned chipotles
1 1/2 tablespoons cider vinegar
1 tablespoon miso
1/8 teaspoon ground cloves
3 sweet potatoes, peeled and cut into wedges
1 orange, quartered
2 tablespoons olive oil
4 chicken drumsticks (I have also made this with chicken thighs)
1/3 cup flour
In a bowl, whisk orange marmalade, adobo sauce, vinegar, miso and cloves, season. Reserve 1/3 cup of sauce. On a foil lined baking sheet, brush potatoes and orange with oil, season. Season chicken, toss in flour, then brush with sauce. Arrange on baking sheet with potatoes and orange. Roast at 475F for 15 minutes. Turn chicken, brush again. Roast until juices run clear when pierced with a knife, 10 minutes. Serve with reserved sauce.
