I have found that an entire cabbage will easily encompass several meals in our family. So after shredding, dicing and slicing for various dishes, I chopped the remainder into this uniquely delicious Potted Ham and Cabbage dish.
POTTED HAM AND CABBAGE
In a small saucepan, melt 2 oil packed anchovy fillets in 1/4 cup olive oil. Scrape into a bowl. Stir in 1/2 pound diced ham, 1 cup finely chopped green cabbage, 1 chopped dill pickle, 2 tablespoons chopped parsley, season with salt and pepper. Pack into a ramekin.
