This is a lovely addition to a holiday cheese plate, making entertaining elegant and effortless for guests planned, or those pleasantly unexpected.
CHIPOTLE CHERRY JAM
1 teaspoon cornstarch
1/3 cup water, divided use
12 ounce package of frozen cherries, thawed
juice of 2 lemons
1/4 cup sugar
1 minced chipotle pepper in adobo
In a small bowl, combine cornstarch with about 1 teaspoon of the water, stirring until cornstarch is dissolved.
In a saucepan, combine cornstarch mixture, remaining water, cherries, lemon juice, sugar and chipotle pepper. Bring to a boil, reduce heat and simmer 10 minutes. Remove from heat and let cool. Serve room temperature, or refrigerate and serve cold.
