I like to have a little something sweet, ready to welcome the kids home after their first day back at school. This yummy cake with thick, rich Cocoa Butter Icing was a delight to bake and the perfect treat after a long day.
CHOCOLATE CAKE
CAKE
1 1/2 cups flour
1/3 cup cocoa
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
1 1/2 teaspoons vanilla essence
1 tablespoon white vinegar
1/3 cup light olive oil
cocoa butter icing (recipe follows)
Heat the oven to 350F. Line a springform pan with baking paper, making sure excess paper is held between the base and the top ring.
Sift dry ingredients into the pan and stir to combine. Make 3 evenly spaced holes in the dry mixture. Pour vanilla essence into one, vinegar into another and oil into the third.
Pour 1 cup warm water over the top and gently stir until combined. Bake for 45 to 50 minutes or until cooked when tested with a skewer. Allow to cool completely on a wire rack. Decorate with Cocoa Butter Icing and fresh blueberries if desired.
COCOA BUTTER ICING
Place 250 grams butter at room temperature, 3 cups icing sugar, 1/4 cup cocoa and 2 tablespoons of cold milk into a bowl. Beat with electric beaters until smooth and combined.
