I baked this Fresh Apple Cake on a day a friend was dropping her son off for a sleep over, and I made sure and gave her and her family a generous portion to take home, therefore ensuring there was less for me and my family to indulge in.
FRESH APPLE CAKE
2 cups sugar
1 cup canola oil
2 teaspoons vanilla extract
3 cups flour
1 teaspoon salt
1 teaspoon baking powder
3 cups chopped peeled apples
Heat oven to 350F. Grease and flour a 9-inch tube pan.
In a large bowl, beat sugar, oil, eggs and vanilla until well blended. In another bowl, whisk flour, salt and baking powder, gradually beat into oil mixture. Stir in apples. Transfer batter to prepared pan.
Bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean. Cool in pan for 10 minutes, then remove cake to a wire rack to cool.
