I have been receiving extra copies of a magazine I have a subscription to, and wanted to drop them off to a designer friend. I baked Orange Zest Madeleines to accompany the literature I delivered to her doorstep.
ORANGE ZEST MADELEINES
1 cup flour
2/3 cup sugar
1 tablespoon orange zest
1/4 teaspoon salt
2 eggs, lightly beaten
1/2 cup butter, melted and cooled
1 tablespoon fresh orange juice
1/2 teaspoon vanilla extract
In a medium bowl, stir together flour, sugar, orange zest and salt. Add eggs and beat with a wooden spoon until smooth. Add melted butter, stirring to combine. Cover, and chill batter for at least one hour.
Heat oven to 350F. Spray madeleine pans with baking spray.
Spoon batter into prepared pans. Bake for 10 minutes or until light golden brown. Remove from oven and let cool in pan for 2 minutes. Remove from pans and let cool completely on wire racks. Sprinkle with confectioners sugar.
