We had watermelon in the fridge that needed to be used up and finished off – everyone had eaten their fill three times over – so I decided to incorporate the fruit into a cocktail.

Combine 1/2 cup sugar, 1/4 teaspoon salt, 6 torn fresh mint sprigs, and half a lime chopped in a medium bowl, stir to combine. Let stand for 10 minutes. Pour 3/4 cup boiling water over mint mixture, stirring until sugar dissolves, let stand 10 minutes.

Strain mint mixture into a bowl, pressing on solids. Discard solids. Combine liquid, 8 cups chopped fresh watermelon, 1 cup tequila and 1/2 cup fresh lime juice in a blender. Process until smooth. Place in a shaker with ice and strain into a cocktail glass.
