The oats were a wonderful addition in this recipe – adding a lovely texture and delicious flavor.


1 1/2 cups boiling water
1 cup rolled oats
1 cup sugar
1 cup brown sugar, packed
1 cup vegetable oil
2 eggs
1 1/3 cup flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt

1/2 cup butter
2 tablespoons milk
1 cup brown sugar, packed
1 cup of chopped pecans

To prepare the cake, pour the boiling water over the oats in a bowl and let stand for several minutes. Combine the sugar, brown sugar, vegetable oil and eggs in a mixing bowl and beat until smooth. Add the flour, baking soda, cinnamon and salt and mix well. Stir in oat mixture. Spoon the batter into a greased 9-by-13 cake pan.
Bake at 350F for 30 minutes or until wooden toothpick inserted in the center comes out clean.
To prepare the topping, combine the butter, milk and brown sugar in a saucepan and bring to a boil, stirring to mix well. Boil for 1 minute. Remove from the heat and stir in the pecans. Spread over the hot cake immediately.
