Couldn’t pass up the delicious opportunity to acknowledge Chocolate Cake Day!!
CHOCOLATE FUDGE BROWNIE CAKES
2 tablespoons instant coffee powder
1 tablespoon cold water
200 grams butter
2 cups brown sugar
2 teaspoons vanilla essence
2 tablespoons cocoa
2 cups flour
2 teaspoons baking powder
200 grams chocolate, chopped
Heat oven to 180C. Line a 12-cup muffin tray with paper liners.
In a large saucepan over medium heat, place coffee powder, water and butter. Stir until butter melts then stir in the brown sugar. Cool for a few minutes then beat in the eggs and vanilla. Stir in the cocoa, flour and baking powder. Lastly, mix in the chocolate.
Spoon the mixture into the prepared muffin tray and bake 30 to 35 minutes. Cool on the tray on a wire rack.
