FRESH PINEAPPLE

I brought a container of fresh pineapple home from the supermarket – already peeled, cored and cut – thinking to provide a convenient snack, needing no preparation.

What I imagined would be gone in mere hours, was still languishing in the refrigerator days later – so I promptly looked for recipes to transform this tropical fruit.

After chopping, measuring, mixing, patting, pouring and placing the Fresh Pineapple Bars into the oven, I received a call from the school nurse, informing me my daughter wasn’t feeling well and would need to be picked up. Torn between motherly duty and bakers responsibility, I turned the temperature down on the oven and made the drive across town – with the bars being no worse for my neglect during their cooking time.

By comparison, using up the rest of the fruit was simple – I blended it with lime and simple syrup, poured it into three glasses, topped two of them with gin and a sprig of fresh mint and enjoyed a happy hour with my husband and daughter.

FRESH PINEAPPLE BARS

1/2 cup unsalted butter, softened

1 1/4 cups flour, divided

1 cup sugar, divided

pinch of salt

1 egg

1/3 cup sour cream

1 1/2 teaspoons vanilla extract

1 cup fresh pineapple, chopped

Heat oven to 350F. Line an 8-by-8-inch pan with foil, spray with cooking spray, set aside.

In a large bowl, add the butter, 1 cup flour, 1/2 cup sugar and salt. Using your fingers, rub the butter into the dry ingredients until it resembles breadcrumbs.

Reserve 3/4 cup of this mixture, set aside.

Transfer remaining mixture into prepared pan and lightly press crumbs until even to form a crust.

Bake for 10 minutes.

While crust bakes, make the filling. In a large bowl, add the egg, remaining 1/2 cup sugar, sour cream, vanilla extract, and remaining 1/4 cup flour and whisk until smooth.

Remove the crust from the oven and top evenly with pineapple. Pour the sour cream mixture over the pineapple.

Sprinkle the reserved crust mixture over the top to create the crumble topping.

Bake for 35 minutes, or until edges and top are set. Place pan on wire rack and allow to cool for at least an hour before slicing and serving.

PINEAPPLE AND GIN COCKTAIL

Blend 3 cups fresh pineapple pieces with 1 cup ice and 1 ounce of pineapple juice. Mix in 2 ounces simple syrup and 2 ounces fresh lime juice. Pour into glasses and top with gin, stir gently to mix. Garnish with mint.

MARMALADE WHISKEY SOUR

My husband fully appreciates a smooth, elegant tumbler of bourbon, making this cocktail a pertinent choice to start the Fathers Day weekend celebrations.

MARMALADE WHISKEY SOUR

marmalade whiskey sour

20 ounces bourbon

1/2 cup fresh lime juice

1 tablespoon superfine sugar

1/2 cup orange marmalade

1/4 teaspoon angostura bitters

ice and maraschino cherries for serving

Combine bourbon, lime juice, sugar, marmalade and bitters in a pitcher. Stir vigorously until sugar is dissolved.

Fill glasses with ice, top with bourbon mixture and serve each with a maraschino cherry and a drizzle of cherry liquid.

MARTINEZ and CHERRY COCKTAIL

Cherry inspired cocktails in a coupe!

MARTINEZ

martinez

2 ounces gin

3/4 ounce sweet vermouth

1/4 ounce maraschino liqueur

2 dashes orange bitters

Combine ingredients in a cocktail shaker. Add ice, stir and strain into a chilled coupe glass. Garnish with a Luxardo maraschino cherry.

CHERRY COCKTAIL

cherry cocktail

In a cocktail shaker, muddle 1/4 cup frozen cherries with 3/4 ounce honey, 2 ounces of maraschino liqueur, 1 1/4 ounces cranberry juice, 1/2 ounce fresh lime juice and vodka to taste. Stir to combine, fill with ice, cover and shake. Strain into a coupe.

Sipping this refreshing, well balanced cocktail out on the back deck was delayed, after my Son asked me to walk down to the park with him. Once we had reached as high as we could on the swings, and climbed the castle, we meandered home in the growing dusk, and rested out on the back deck.

BERRYLICIOUS

2 ounces vodka

1/2 ounce Licor 43

1/2 ounce grenadine

1/2 ounce fresh lime juice

3 strawberries

ice

Add all ingredients to a blender. Blend then pour into a martini glass.

Enjoy!

TEQUILA WATERMELON REFRESCO

I served this cocktail to friends, who were over for an end of summer pool party. Light and refreshing, it was the perfect way to end the week and enjoy the outdoors.

TEQUILA WATERMELON REFRESCO

5 1/2 cups chopped seeded watermelon

3/4 cup tequila

6 tablespoons Triple-Sec

5 tablespoons fresh lime juice

2 1/4 cups club soda, chilled

Place watermelon in a blender, process until smooth. Pour pureed watermelon into a sieve over a large bowl, pressing with the back of a spoon to extract as much liquid as possible, discard solids. Combine 3 cups watermelon juice, tequila, Triple Sec and lime juice in a pitcher, stir with a whisk. Gently stir in the club soda. Serve over ice with lime wedges if desired.

THE JUICE BOX and CUCUMBER MOJITO

I was curious to try these cocktails infused with cucumber – both were different and both were delicious. Lovely and refreshing for a hot summer day.

THE JUICE BOX

4 slices cucumber

mint leaves

2 ounces gin

3/4 ounce lime juice

3/4 ounce St Germain

1/2 ounce simple syrup

Snap the cucumber slices in half, toss them in a shaker and give them a quick muddle. Throw in a generous amount of mint leaves and ice, along with all the other ingredients, and shake as hard as you can. Strain into a rocks glass filled with fresh ice. Garnish with a cucumber slice.

CUCUMBER MOJITO

85 grams cubed cucumber

1 small handful of mint leaves

60 ml agave nectar

60 ml fresh lime juice

45 ml white rum

soda, ice and mint to serve

In a cocktail shaker, muddle the cucumber, mint, agave nectar, lime juice and rum. Strain into a glass with ice and top with soda water. Garnish with mint if desired.

I mixed up these margaritas for a fun, casual happy hour at home. I gave Mum the choice between a bourbon or tequila based cocktail, and it wasn’t a surprise when she chose the tequila, as when she is here in town we dine frequently at our local Mexican restaurant, predominantly because of their frozen Margaritas.

THE ST. RITA

3 cups ice

2 ounces blanco tequila

1 1/2 ounces fresh lime juice

1 ounce St. Germain

1/2 ounce triple sec

Garnish – lime slice

If desired, rub rim of glass with lime wedge and dip rim of glass in salt to coat.

In a cocktail shaker, combine ice, tequila, lime juice, St. Germain and triple sec.

Shake vigorously for 20 to 30 seconds. Strain mixture into prepared glass, garnish with lime slice.

CHILEAN SEAFOOD STEW

A stew is usually a dish I consider for the cold depths of winter, however, this Chilean Seafood Stew is light and fresh enough to be enjoyed in the fall, when the weather is fluctuating between warm and cool, and sometimes both in one day.

CHILEAN SEAFOOD STEW

3 tablespoons of olive oil
1 onion, sliced
1 yellow bell pepper, sliced
1 orange bell pepper, sliced
1 red bell pepper, sliced
4 garlic cloves, minced
1 teaspoon chopped jalapeno
1 cup white wine
1 cup clam juice
1 (28 ounce) can of crushed tomatoes in juice
1 bay leaf
1/4 cup lime juice, plus 2 limes quartered
2 pounds white fish, cut into pieces
1 pound shrimp, peeled
1 cup whole cilantro leaves, chopped
4 scallions, chopped

In a saucepan, heat the olive oil. Saute the onions until they begin turning brown, 8 to 10 minutes. Toss in the bell peppers and cook an additional 3 minutes. Add the garlic, jalapeno, wine, clam juice, tomatoes, bay leaf and lime juice.
Bring to a boil, then reduce to a simmer for 15 minutes.
Add the fish and the shrimp and continue cooking 5 minutes, utnil the shrimp are opaque. Remove from heat, discard the bay leaf and stir in the cilantro and scallions. Serve with lime wedges.
