PEAR AND POMEGRANATE BELLINI

5 ounces pear brandy

3 ounces pomegranate juice

1 bottle prosecco

1/4 cup pomegranate arils

Combine brandy and pomegranate juice in a glass pitcher. Gently stir in prosecco and arils just before serving (I mixed the cocktail  in individual glasses as guests arrived).

Enjoy!

I first learned about this graceful cocktail while on vacation with girlfriends. We noticed them being served at the table next to us at the elegant restaurant we stopped into for lunch, and it sounded fun and festive to have one with our meal. I then recreated them at home for a ladies Afternoon Tea, a perfect pairing with wonderful conversation, delicate morsels and cups of tea to end the afternoon.

POINSETTIA

4 ounces chilled Champagne or Prosecco

2 tablespoons cranberry juice

Pour Champagne or Prosecco into a flute, and top with juice.

Enjoy!

TRAVEL TUESDAY – POLLING PLACE – OUR PRECINCT 

Today I had the privilege of voting for the third time ever, and I want to wish the best of luck to everyone that is running. I imagine, no matter what party you identify with, it takes great courage, conviction and a lot of hard work to run for office, and for all of us to take the time to support our candidates.

Watching the results come in is always more pleasant with a cocktail, and this Orange Ginger Pomegranate Punch is perfect. I made the syrup, poured a little into a champagne flute, then topped it with Prosecco. At the end of the evening, I popped the syrup into the fridge for another night, ready to be served with a fresh bottle of bubbles.

Great for a crowd, and also for an individual serving.

ORANGE GINGER POMEGRANATE PUNCH

In a small saucepan combine 1/2 cup of water and 1/2 cup sugar, 1 tablespoon of freshly grated ginger and 2 fresh rosemary sprigs. Cook and stir until sugar dissolves. Remove from heat. Cover and let stand for 30 minutes. Strain. In a pitcher, combine syrup, 2 cups pomegranate juice and 1 cup orange liqueur. Add a bottle of Prosecco. Serve over ice.

Enjoy!

SPARKLING SANGRIA

My brother and his family came to stay with us during their recent trip to America. They hit many highlights in a short amount of time – Disneyland, Las Vegas, San Diego and Fayetteville, Arkansas. I was so thrilled they took the time to venture this far inland, and wanted to make the visit very special for them. So when my sister-in-law mentioned how much she had been enjoying white sangria, I found a recipe, and mixed up a batch for pre-dinner cocktails.

SPARKLING SANGRIA

white sangria

1 tablespoon ginger syrup

1 1/2 cups sliced frozen peaches

1 cup sliced strawberries

1 cup peach liqueur, chilled

1/2 cup peach brandy, chilled

1 bottle prosecco, chilled

In a pitcher, stir together ginger syrup, peaches, strawberries, peach liqueur and peach brandy, chill for 15 minutes. Divide among glasses and top with prosecco.

THE STRAWBERRY MUDDLE

I served this fun cocktail before a friend and I attended a recent show at the Walton Arts Center. Our regular mama schedules left little time to catch up before the performance, so it was a quick drink, bite to eat (I thought this yummy and fresh cocktail paired well with a triple cream brie with strawberries and crostini sprinkled with sea salt and herbs de provence) and an excited flurry of words on the back deck before rushing off to the show.
“Listen to your Mother” was absolutely incredible, we laughed, we cried and I felt my role as a mother was re-affirmed and re-energized. Every women (and Man) up there had a wonderful, touching, thought provoking story, that made me feel so very thankful to be a mother.
I told my kids about the show earlier and my oldest son said “no Mum, what is it really called”. They were as intrigued as I was, and I’m not sure I could find the words to fully explain its awesomeness to them even after seeing the show.

THE STRAWBERRY MUDDLE

1 1/2 cups chopped hulled strawberries
3 tablespoons of agave nectar
juice of 1 lemon
6 ounces of gin
6 thin lemon slices
ice
1 chilled bottle of prosecco

Divide strawberries among 6 glasses, add 1/2 tablespoon of agave nectar, a splash of lemon juice, and 1 ounce of gin to each glass. Mash with a muddler.
Add a lemon slice to each glass, several ice cubes and top with prosecco.
Enjoy!
