FRESH PINEAPPLE

I brought a container of fresh pineapple home from the supermarket – already peeled, cored and cut – thinking to provide a convenient snack, needing no preparation.

What I imagined would be gone in mere hours, was still languishing in the refrigerator days later – so I promptly looked for recipes to transform this tropical fruit.

After chopping, measuring, mixing, patting, pouring and placing the Fresh Pineapple Bars into the oven, I received a call from the school nurse, informing me my daughter wasn’t feeling well and would need to be picked up. Torn between motherly duty and bakers responsibility, I turned the temperature down on the oven and made the drive across town – with the bars being no worse for my neglect during their cooking time.

By comparison, using up the rest of the fruit was simple – I blended it with lime and simple syrup, poured it into three glasses, topped two of them with gin and a sprig of fresh mint and enjoyed a happy hour with my husband and daughter.

FRESH PINEAPPLE BARS

1/2 cup unsalted butter, softened

1 1/4 cups flour, divided

1 cup sugar, divided

pinch of salt

1 egg

1/3 cup sour cream

1 1/2 teaspoons vanilla extract

1 cup fresh pineapple, chopped

Heat oven to 350F. Line an 8-by-8-inch pan with foil, spray with cooking spray, set aside.

In a large bowl, add the butter, 1 cup flour, 1/2 cup sugar and salt. Using your fingers, rub the butter into the dry ingredients until it resembles breadcrumbs.

Reserve 3/4 cup of this mixture, set aside.

Transfer remaining mixture into prepared pan and lightly press crumbs until even to form a crust.

Bake for 10 minutes.

While crust bakes, make the filling. In a large bowl, add the egg, remaining 1/2 cup sugar, sour cream, vanilla extract, and remaining 1/4 cup flour and whisk until smooth.

Remove the crust from the oven and top evenly with pineapple. Pour the sour cream mixture over the pineapple.

Sprinkle the reserved crust mixture over the top to create the crumble topping.

Bake for 35 minutes, or until edges and top are set. Place pan on wire rack and allow to cool for at least an hour before slicing and serving.

PINEAPPLE AND GIN COCKTAIL

Blend 3 cups fresh pineapple pieces with 1 cup ice and 1 ounce of pineapple juice. Mix in 2 ounces simple syrup and 2 ounces fresh lime juice. Pour into glasses and top with gin, stir gently to mix. Garnish with mint.

POMEGRANATE ROSEMARY SPARKLING COCKTAIL

We continued our treasured and warmly anticipated tradition of gathering with family during the Thanksgiving week, packing two cars this year as my husband wanted to take his four wheel drive off-roading in the surrounding forests. I shopped for groceries before we left town, and as always, packed sharp knives, and the ingredients and kitchen tools needed for the various recipes I planned to make. However, tradition also dictates that things get left behind and forgotten, and additional ingredients are always needed as recipes invariably change. Once settled, my Sister-in-Law was making the drive to the nearest well-stocked supermarket and graciously and generously offered to pick up anything needed – which for us included champagne flutes for that evenings cocktail.

POMEGRANATE ROSEMARY SPARKLING COCKTAIL

pomegranate rosemary sparkling cocktail

1/4 cup water

1 tablespoon sugar

3 sprigs of fresh rosemary

1/2 cup pomegranate juice

sparkling wine

Combine 1/4 cup water and sugar in a small saucepan, bring to a simmer, stirring until sugar dissolves. Remove from heat. Add rosemary, let stand 30 minutes to an hour. Remove rosemary.

Pour 2 tablespoons pomegranate juice and 1 tablespoon of rosemary syrup into champagne flutes. Top each serving with sparkling wine.

I was relaxing with my husband after a long day, and mixed this beautiful and delicious cocktail to enjoy, infusing the evening with even more warmth and ease.

SIDECAR

1 3/4 ounces cognac

3/4 ounce Grand Marnier

3/4 ounce fresh lemon juice

1/4 ounce simple syrup

dash of orange bitters

1 orange twist, for garnish

Fill cocktail shaker with ice. Add the cognac, Grand Marnier, lemon juice, simple syrup and bitters and shake well. Strain into a chilled coupe and garnish with the orange twist.

Enjoy!

SPARKLING THYME COCKTAIL and RHUBARB COLLINS

Jewels, bright white smiles and sequins won’t be the only things sparkling come the evening of The Oscars. Put a little glitter in your glass with these lively cocktails.

SPARKLING THYME COCKTAIL

1/4 cup sugar

16 sprigs fresh thyme

4 lemons, juiced

2 cups vodka

ice

sparkling wine

In a small saucepan, melt the sugar in 1/2 cup water over medium heat, add thyme sprigs. Let cool.

Strain the mixture into a small pitcher, stir in the lemon juice and vodka. Refrigerate until chilled, about 1 hour.

Fill rocks glasses with ice. Pour in the vodka mixture and top off each drink with sparkling wine.

RHUBARB COLLINS

1 (4 ounce) stalk of rhubarb, trimmed and cut into 1/2 inch pieces

1/2 cup sugar

2 ounces gin

1 ounce lemon juice

2 to 4 ounces champagne

In a small pot, combine the rhubarb and sugar with 3/4 cup water and bring to a boil. Reduce the heat to moderately low and simmer until slightly thickened and bright pink in color, about 20 minutes. Let the syrup cool then pour through a fine-mesh sieve set over a bowl. Press down gently and discard the solids.

In a cocktail shaker, combine 1 ounce of the rhubarb simple syrup, with the gin and lemon juice. Fill the shaker with ice and shake vigorously until completely mixed, about 20 seconds. Strain into a champagne glass and top with champagne.

TRAVEL TUESDAY – POLLING PLACE – OUR PRECINCT 

Today I had the privilege of voting for the third time ever, and I want to wish the best of luck to everyone that is running. I imagine, no matter what party you identify with, it takes great courage, conviction and a lot of hard work to run for office, and for all of us to take the time to support our candidates.

Watching the results come in is always more pleasant with a cocktail, and this Orange Ginger Pomegranate Punch is perfect. I made the syrup, poured a little into a champagne flute, then topped it with Prosecco. At the end of the evening, I popped the syrup into the fridge for another night, ready to be served with a fresh bottle of bubbles.

Great for a crowd, and also for an individual serving.

ORANGE GINGER POMEGRANATE PUNCH

In a small saucepan combine 1/2 cup of water and 1/2 cup sugar, 1 tablespoon of freshly grated ginger and 2 fresh rosemary sprigs. Cook and stir until sugar dissolves. Remove from heat. Cover and let stand for 30 minutes. Strain. In a pitcher, combine syrup, 2 cups pomegranate juice and 1 cup orange liqueur. Add a bottle of Prosecco. Serve over ice.

WHITE WINE SPRITZER

This is a fun, refreshing, light and delicious cocktail for a Fourth of July celebration. The berries make it festive, and add to the red, white and blue theme of the day.

The syrup did make the drink quite sweet, I would recommend adding it slowly until the spritzer reaches the desired amount of sweetness.

WHITE WINE SPRITZER

white wine spritzer

1 (750ml) bottle of sparkling wine

1 (750ml) bottle of chardonnay

vanilla simple syrup (recipe follows)

1 (1 litre) bottle of sparkling water, chilled

VANILLA SIMPLE SYRUP

2 cups water

2 cups sugar

1 vanilla bean, halved lengthwise

In a small saucepan, combine 2 cups water, sugar and vanilla bean. Bring to a boil over high heat. Reduce heat, and simmer for 10 minutes. Remove from heat, and pour mixture through a wire mesh strainer, discarding solids.

Fill a large pitcher with ice. Add sparkling wine, chardonnay and vanilla simple syrup. Add sparkling water, stirring to combine. Serve, garnished with berries and fresh mint if desired.
