My husband and I had a wonderful evening at a recent charity event, visiting with fabulous friends, enjoying tasty food, and for me, bidding with a passion on the silent auction items. Afterwards, rather than go out for a night-cap, my husband suggested we return home, relieve the sitter and cozy up with a cocktail of my choice on the couch. I was quite excited, as my husband usually doesn’t get too adventurous with mixed drinks. I made this Apple Ginger Whiskey Sour for us, adjusting the amount of each ingredient so the recipe was suitable for two. It was a perfect end to a great night.
APPLE GINGER WHISKEY SOUR
4 cups apple cider
1 1/3 cups light brown sugar
2/3 cup fresh lemon juice
2 tablespoons minced fresh ginger
1 cup whiskey
fresh orange rind to garnish
In a medium saucepan, combine cider, brown sugar, lemon juice, and ginger. Bring to a simmer over medium-high heat and cook, stirring until sugar dissolves, about 10 minutes. Strain mixture through a fine-wire-mesh strainer into an airtight container, discard solids. Cover and refrigerate for 2 hours (I didn’t have time for this part). Stir whiskey into apple mixture. Divide among ice-filled glasses. Garnish with orange rind.
